14/18 Healthy Oils with Val

Orinigally Aired May 5th-7th-9th at 6pm on Vibrational Eating with Val MacDonald.

Today on Vibrational Eating Val talks to us about healthy oils, and now here is Val’s vinaigrette recipe;  It’s super easy to make, and you will find that it has many uses.  I love making a batch of quinoa or brown rice, and tossing it with this dressing and adding cut up carrots, green onions and roasted sunflower seeds.  It is the ideal green salad dressing, and it can also be used as a marinade for chicken or fish.

So you take;

½ cup lemon juice

⅔cup extra virgin olive oil

⅛ cup balsamic vinegar

3-4 garlic cloves, minced

2 tsp Dijon mustard

3 Tbsp maple syrup

2 tsp dried basil

½ tsp salt, pepper to taste

Place all in a jar and shake thoroughly.

I’d like to know if any of you have a favourite olive oil that you would like to share the name of.  If you do, please send it to me.  My email address is val@valmacdonald.com .  I will share it on a future show.
