C15/39b Being Strong with Veganism

Where to begin? It would be easy to start with something positive, such as “you never lose, you only learn” or “your greatest challenges hide your greatest lessons”, but this wouldn’t be just. I doubt that anybody during their ‘greatest challenge’ ever boasts a huge smile and says “I’m so happy to be in the midst of some brilliant future lesson”.


Kate is a Welsh-born international traveller. She has spread her wings far and wide not only geographically but in every aspect of her life. Having graduated with a double Masters in Mechanical Engineering from French and English universities, Kate has had a diverse career path from having a career in fashion in Italy to working as a Divemaster in Mexico!
 Until recently, Kate owned and operated a guesthouse and restaurant in the Blue Mountains of Australia. Only in 2013 did Kate decide to balance her life by taking care of her physical self and committed to the sport of triathlon.

Initially, struggling to run just 5km, she dedicated all her spare time into becoming a triathlete. Within eleven months of her first triathlon, Kate found herself on Australia’s age-group team and competed and won her age-group in the ITU World Championships and is currently World Champion in long-distance triathlon (4km swim, 120km cycle, 30km run).

HOW HAS KATE DONE IT? by EMBRACING A VEGAN DIET 


Great Way to Start the Day Muesli Recipe Ingredients 50g rolled oats 2 tablespoons chia seeds 1 tablespoon activated linseed (flaxseed) 1 teaspoon poppy seeds 1 teaspoon sesame seeds 15g dried cranberries 10g goji berries 10g pepitas (pumpkin seeds) 1/2 cup water 1/2 cup apple juice, or water Seasonal fruit – the unpeeled variety! Method 1.  Combine the oats, chia seeds and linseed into your breakfast bowl and add water. Leave for 5-10 minutes to soak. The ingredients will absorb all the water in this time and almost ‘set’. I activate the linseed by soaking them in water overnight. 2.  Add all other ingredients and pour over apple juice, or water. Apple juice sweetens the muesli and is a great alternative to milk and soy milk. I use water because when I travel I know I always have water available and the juice is seen as a treat. 3.  Add 2-3 different seasonal fruit to the muesli for added crunch and flavour. I tend to eat fruit that doesn’t require peeling. Peeled fruit has, on general, a higher sugar percentage than fruit that can be eaten without peeling. 4.  Find quiet spot and enjoy! Today, Kate is a mentor to individuals and SMEs assisting in creating positive change through conscious questions. She works from the inside out ensuring that all the core values are in alignment and working together to achieve the desired result.
